Creamy Lemon Pasta (Dairy-Free)

This simple pasta sauce is perfect for last-minute meals as it takes just minutes to whip up. Light, zesty and dairy-free and vegan, it's also a dream for Meat-Free Mondays!

Serves 2 people 5 minutes preparation time 10 minutes cooking time

Ingredients

200g Rizopia fettucine or spaghetti

Zest and juice one lemon

1/2 cup oat cream (could also use coconut cream, but will have a less neutral taste!)

Large handful basil

Salt and pepper, to season

Nutritional Yeast (or Parmesan) to sprinkle over - optional

 

Method

1) Start by gently heating the cream with the lemon zest, stirring to combine. Cook until mixture is ready to come to a low boil - a few minutes - then remove from the heat, stir through the fresh basil and season to taste. Set aside.

2) Cook your pasta according to packet instructions. Drain, then stir through the creamy lemon sauce, adding the lemon juice too. Heat a touch more, if needed, then season with more cracked black pepper, if desired.

3) Serve warm in bowls topped with Nutritional Yeast. Enjoy!
