Carrot Top Pesto

We never get tired of pesto pasta! This Carrot Top Pesto is a great way to use up any leaves from carrots you may have lying around.
Ingredients
2 cloves garlic, minced
Leaves from one bunch carrots, chopped and washed
1/2 cup walnuts
Large handful basil
Zest and juice half a lemon
2 tbsp Nutritional Yeast (or use 4 tbsp Parmesan)
Olive oil
Salt and pepper, to taste
Method
1) Add ingredients into a high-powered blender and blitz until smooth (or desired texture), adding olive oil as needed - we used around 3 tbsp. Season to taste.
2) Store in airtight containers in the fridge and stir through cooked pasta of choice.
